Dark Chocolate Glaze
(makes approximately 2 cups)
¾ cup heavy cream
8 ounces semisweet chocolate
2 teaspoons light corn syrup

In a small saucepan, bring the cream to a boil, the reduce the heat and let it simmer for 2 minutes. Put the chocolate and corn syrup in bowl, and pour the hot cream on top. Let the cream sit for 3 minutes, then stir well until all the chocolate is melted and the mixture is smooth.
