Here's what I made with it:
- Linguini with grilled radicchio, scallions, parsley-walnut pesto, and parmesan (this was my final attempt to make peace with radicchio and it did not go well - but if you like radicchio, here's the recipe that was the model for this dish)
- Pea risotto with pea broth, parmesan, and parsley-lemon gremolata
- Raspberry-almond cake
- Hummus sandwiches with lettuce, cucumbers, roasted red peppers, olives, and harissa
